Providing an explanation letter to state the fact that she made a mistake should be sufficient. Actually I believe the CIC has been aware of that already and they understood, because if they had issue with that mistake, then your mom's work permit wouldn't be approved back then.

you need to provide the application/document number in order to get the file. check your mother's visitor visa, it will have the document number (i guess it should start with V).

no need to provide any additional document as your mother is in Canada.
