Thank you. I am leaving ISB Dec 25 to Toronto, so have plenty of time.
The baby will have Limited Validity Passport Canadian passport, Pakistani Passport, Nadra Birth Certificate and Polio Certificate.

Do they really require the NIC/NICOP # of both parents to start the child's pakistani passport application? I was under the impression they only required it of one parent. In our case my NICOP was expired so i have to wait 6 weeks to be issued a new one before being able to apply for child's passport.

Yes, you will need a valid NIC/NICOP for both parents to get a Pakistani Passport for the child.
Because I am not a Pakistani National, I have to supply my Canadian Passport.
