Oh - we thought my son was celiac (may still be). They did an endoscopy when he was just 2 1/2 to look for damage (he turned 3 this month) and they didn't find anything- nor did his blood tests show so. But, he continues to have issues. He was at the time allergic to milk, wheat, peanuts. He now is just allergic to peanuts, walnuts and almonds - the milk & wheat went away... thank goodness - rice milk was costing over $100 a month.

Offhand my favorites are Boca Spicy Chicken and Morningstar Bacon.
I'm very picky and had some brands of things when I've visited and not been very pleased but my sister-in-law picked them up.

I don't like any Lightlife products.
I like Gardenburger but can't seem to find them in stores here- but a restaurant used to sell them.
LOVE black bean anything pretty much.
I LOVED Quorn brand but every since having my kids I am sick everytime I have it now.

But nothing worse than wasting money on something that you just can't even swallow one bite of.

I asked my husband - he's Nigerian, but we're staying in Malaysia while we wait - what he misses about Nigeria, and he said only the food.
Every time I have spent more than a couple of months in a foreign country, it was basically the food I missed at first. But after a while, I got over it. It seems to take me about 2 months to get used to a new place. At first in Nigeria I would think about hamburgers and pizza, and cheese; I'd imagine what I'd have for breakfast every day when I got home. Same when I lived in China - at first I'd want Western food, but after a few months I started to appreciate that actually the food I was eating tasted better than the food I had had in Canada, and was also a lot fresher.
Now I miss the food I had in China.

My husband too...the Nigerian guys do like their traditional food. But I have been learning and actually am able to find most of the stuff to make many of the dishes here and I live in a tiny little town. As for specialty stuff like for Celiac or vegetarian diets, I am a Chef and cook all those sorts of things...have never had trouble finding the ingredients :) Don't worry!

I shall miss New England in general, there is a lot to miss but i'm prepaired for it.

- The level of general education in the Boston area.

I will give it all up in exchange for the one i've waited for my whole life :)

When I was in Nigeria for our wedding my mother-in-law taught me how to make eba (pounded yam), my husband's favourite food. I had eaten it before in restaurants but it didn't taste as good as the yam pounded in the wood mortar! Maybe because it took so much effort to make made it taste better. I told my mother-in-law about my kitchen-aid mixer, and we agreed it would be a good substitute for pounding! LOL! I think she was impressed that I wanted to learn how to make his food because her other daughters-in-law don't care.

He lived in UK for 6 years, so he is used to eating non-Nigerian foods. Thankfully he can cook well, so he will be teaching me a lot! Next up is learning how to make jollof rice...OMG...I love that stuff. Other than that, I can do dodo (plantains), but will have to learn how to make the meat and soups.

I'm hoping I can find most of the ingredients in Edmonton. I live in St Albert where there are no ethnic foods (no immigrants either...) so we will have to drive a bit to south side of Edmonton. I'm pretty sure there is an African grocer there.

I am lucky my husband is a great cook too..his mother taught him well. He makes ewo and dodo (the SPICY beans and fried plantain) that is my FAVORITE. I learned to make the eba and fufu, but his is better :) I think it is a technique thing! But I have learned to make a good egusi stew, though the egusi seeds that are ground and used to thicken it can't be found here, ground pumpkin seeds worked very well. Just a little creative substitution sometimes..lol Some of the other traditional foods are a little too much for my fragile stomach, but fortunately he also orders a mean cheese pizza, so I think it is all good :)
