You only need an appointment if you want to land while already in Canada and want to just go into the immigration office instead of the border. At the border you are free to come any time.

Isn't it too late already considering COPR has been issued? Either way, if you are able to withdraw sponsorship they will not be able to land. Your co-sponsor status wasn't just for the paperwork. You made a commitment to that person.
