Since you are on a permit, you would need a TRV (Temporary Resident Visa) in order to return back to Canada. Check on your passport, what current valid visas you have. If you have a Multiple Entry Visa (Any type, e.g. S-1, W-1 category) then you are good.

I suggest not to include, since it was a part of your study, not individual employment. Also, you don't need any experience letters. Only include experience letters from your work experience on work permit.

You can create as many profiles you want. You profile will only be important, when you receive an ITA. Also, you can't have have multiple profiles for same person in Express Entry.

Where do you find that which NOC you have received an ITA under? or Is this the primary NOC mentioned under Work History?

They will ask you, if you have a very common name, e.g. "John Smith", and someone with that name has a criminal record. In that case, they will ask you to perform a fingerprint RCMP check, to check whether you are that particular John Smith with criminal record, or not.

Also, don't forget to include the Notary stamp of "Valid for Outside India". Ask the notary, he should know about it.
