I spend lot of time trying to find work... which is as stressful as waiting for PR approval and school work :(. I know I'm luckier than many of you to be here in Canada with my BF and be able to work (but no job yet). Since my BF does not make enough for both of us, I'm living on my saving but it is getting very close to the bottom. I wonder what your plans are to find work for you guys?

When I quit working overseas I had trouble finding enough work at home in Canada, despite a degree and killer resume, just because my field of work is not too in-demand. So I put an ad in the online paper as a house cleaner. I had no experience but nobody asked. I got a couple of clients and it was hard work, but I got enough money to survive on without eating my savings until I could go back to school. I'm Canadian born with credentials and a fancy resume, but I'm not ashamed to work hard. Work is work. And for that you can charge $20 - $25 an hour, much better then $10 an hour in other jobs.

I know! I'm so lonely this weekend it's pathetic. Yesterday I butterfly-roasted a whole chicken all for myself. Burp.

Ok I have a good one. Rhubarb Pie. Also enjoyable in tarts.

Ingredients:
Prepared Pie Shells 3
Rhubarb, thinly sliced 4 cup
Butter, softened 5 Tbsp
Sugar 2 cup
Flour 3 Tbsp
Eggs 4
Vanilla 2 tsp
Milk 3 Tbsp

Method
1. Cream butter with sugar that has been mixed with the flour.
2. Add eggs (one at a time) and beat until light and fluffy.
3. Add vanilla and milk.
4. Toss sliced rhubarb in flour and then add.
5. Pour batter into the 3 pies shells.
6. Bake at 400 F for 15 minutes then 350 F for 30 minutes.

Hi everyone!

I too am waiting anxiously for any news from CIC.. well, only good news of course! ;)

I'm German and I live in Canada with my Canadian hubby (sponsor) which is extremely great because I don't know how I would survive this being far away from him. But my work permit (I came here on a Working Holiday Visa) expired in April and since then I'm on a Visitor Record and not allowed to work. :( This is very tough as well, but I'm hoping that the whole process won't take too long and I know in the end it will be worth it.

Some things I like to do when I'm bored: Play the Wii, baking and cooking (I love trying new recipes, lately obsessed with baking with bananas - banana bread & oatmeal banana peanut butter cookies), reading (recently got a library card, and browsing through the library shelfs also gives me something to do), watching TV (all those "girly" shows like 4 weddings, Say yes to dress etc... ^^) I'm on Facebook a lot and skype and chat with my friends from back home, and since my hubbys family lives closeby, I hang out with his sister and her kids a lot. I/we try to be patient and focus on all the good things in life instead of the bad things.

Have a great Sunday and let's keep our fingers crossed for lots of approvals this week!!

Amazing Chocolate Mousse

6 oz Semi-sweet chocolate (I use Baker's Chocolate - 6 squares)
2 tbsp butter/margarine (unsalted is preferred)
2 tbsp coffee (liquid, not the grounds)
2 large eggs, separated
4 tbsp white sugar
1/2 tsp vanilla extract
1/2 cup heavy whipping cream

1. Place a pot of water on to boil. Get a stainless steel bowl slightly bigger than the pot to put over the boiling water such that the bowl will not fall into the water. (double boiler)
2. Melt the chocolate in the stainless steel bowl over boiling water with the coffee and butter. (stir regularly) Once the chocolate is melted, set aside for a few minutes, then whip in the egg yolks. Place the chocolate in the fridge while you proceed with the rest of the steps.
3. Whip the egg WHITES with a mixer, (or really fast by hand) slowly adding 2 tbsp of sugar. Whip the whites until stiff peaks form. (like making meringue)
4. Whip the whipping cream in a separate bowl with the remaining 2 tbsp of sugar, again until stiff peaks form.
5. Take the chocolate out of the fridge, and gently fold in about 2 spoons of the whipped egg whites into the chocolate. Then fold in the rest of the egg whites.
6. Fold in the whipping cream into the chocolate mixture....DO NOT USE A MIXER TO FOLD IN THE WHITES OR WHIPPING CREAM. GENTLY FOLD USING A RUBBER SPATULA.
7. Spoon the mousse into bowls and chill before serving

This is a lot easier to make than it sounds, and it is the smoothest, lightest mousse i've tried! you'll love it!
