Hello, you can do the landing and leave without problem. The officer attending you will do the application for your PR card but you will need to give him a Canadian address to send it when is ready. But you will be required to show your PR card when you try to board a flight to travel back to Canada. (Starting March 15 this will be mandatory). So.. someone should send it to you once received or something like that.
There is another option. You can also ask for travel documents to the Canadian visa office or embassy in the country you are. You should be able to travel with that, too.
SIN number shouldn't be a problem to get right away. I heard some people who had some problems because the officer hadn't updated their PR status in the system yet, but this shouldn't happen very often. If you get your SIN card, then a bank account should be easy to get too. (I think they will require SIN card maybe, but not sure).
