I want to sponsor my mother and need to be a co-sponsor for my spouse's parents. I have 2 queries here.
Please help to clarify those?

1. I have NoticeOfAssessment for the year 2018 and 2019. Hopefully, 2020 can also be included since the sponsorship program is a bit delayed.
But since I started my job in Canada in July 2018 and hence only half-year salary is included in NOA 2018. Can I include this NOA since I don't meet the minimum requirement of Income in 2018?
2. For Income criteria based on NOA, do I need to consider just 3 (Myself, my spouse, my mother)or 5 (myself, my spouse, my mother, spouse's parents)individuals quantity?

1. Your taxable Canadian income after July 2018 will count towards LICO. If you meet the income requirment you can apply.

Since I started working from July onwards my entire yearly salary was not available for 2018 NOA. In that way, it doesn't meet the minimum income requirement.
I wanted to know if I could still consider 2018 NOA (considering if I had 1 year working in 2018, it would have met the condition) since my yearly salary will meet the requirement.

It is the actual amount on line 150 that is considered. Potential income is not considered.

No - you can't consider this. You don't meet the financial requirements for 2018 and don't qualify to apply this year.
