I thought India has like super fast processing for PR. I've seen many people approved in under 6 months.

The tracker shows that everything is complete and the COPR is given, but there is no passport request letter yet, but this message is there.

As the primary applicant, I'm eligible to apply for a Bridging Open Work Permit (BOWP), and my wife is listed as a co-applicant on my application. Our current work permits are set to expire in January 2025. What would be the best approach for applying for her extension alongside my BOWP? Any guidance would be greatly appreciated.

You should receive Portal emails soon. These are part of your virtual landing process where they ask you to confirm your details, upload your photo for your PR card and after that your receive ECOPR.
