What are the chances of interview after re medical has been requested. ?
Not likely! But it can happen, it's happened to applicants before! It all depends on visa office/visa officer!!

Sorry, but I am not sure where all my previous data is stored on this forum. I have 2 questions. My wife currently has a multi entry visa to Canada that doesnt expire til next year. Does she still have to send her passport to mexico as i assume they only want to insert a visa that she doesnt need. They also ask for confirmation of current mailing address. Is that for her address in the Dominican Republic or for my address in Canada or is just the emails, they want confirmation of. They only give us 15 days to complete everything and I am in Canada and my wife is in the Dominican Republic.

yes! she has to send her passport for them to issue her permanent resident visa and confirmation of permanent resident document that she needs for when she arrives in Canada.

For confirmation of her address.. I just typed in a Word document my husbands current address in DR and what his address will be when he arrives in Canada.

Congrats!!!

yes, even though she has a visitors visa, she still needs to send the passport to Mexico for the PR visa, because they are two different visas! Once she gets the PR visa, they will cancel the multiple entry visa! And like sb414 said you just need to type a short letter stating your wife current address in Dr and where she intends to live once she is in Canada, which would be your address!
