WES has a shorter timeframe. About masters if you are sure that it would be assessed by the WES as canadian masters then no need of sending documents of bachelors, otherwise it would be wise to send all degrees/diplomas for assessment.

If you are sure your PGDM would be assessed as equivalent to canadian masters, then no need of sending bachelors. Anyways, would suggest you to send both as in case PGDM is evaluated as only a diploma then you would still get better points for two degrees/diplomas.
Get your roles and responsibilities signed by a colleague and get it notarized, attach colleague's office ID scan. Add these to the other things that you already have. These would suffice.

One letter per company that would indicate (preferably) all designations held along with other required details as per CIC requirement. Though only the current designation mentioned would also do if all other details are there.
