I carried a copy of my ITA, but wasn't asked for any proof. My wife however was asked to produce evidence that we have applied for a visa to Canada. So, the ITA should suffice.

My bank (Citibank) issued a "current balance statement" and statements of the last 6 months. They apparently do not issue an average balance statement. I explained this in my LOE. You can do something similar.
