Yes you are right, most of the companies would not contact you until you are physically present in Canada with a valid Canadian address and phone number.

You can mention that in the personal history. I don't think you need to worry about it (as in getting letter/proof for it, etc.) as long as you are not claiming points for that experience :)

You would need a police clearance from US as you stayed there more than six months. As far as no SSN, you can try calling FBI call center (There is a number on that same page where you get info on identity history) to clarify on how you can go about applying without one. Good luck!!

They send it back to you within 7-10 days. I think they do keep it and then you have to pick it up once its ready. If you have travel plans, you would need to plan accordingly. AFAIK, the only thing about applying in person is you saving the mailing time to and from the consulate.
