My initial thinking was not to include it, but i saw someone recommend this on another forum. If i do write NOC code, the immigration officer will definitely be a little doubtful about who "wrote" the letter

I am not 100% sure, but i would say I can ask a colleague to write me a letter, with my responsibilities. Then get it notarized.
