ThanksI don't think they will have any issues believing that you were in Canada. You can be in Canada and be unemployed for however long you want. IRCC has nothing to do with what you do with your time as long as you filled your taxes and your physical presence day count is good.
I know that sometimes they ask to provide a proof that you were physically in Canada during certain periods of time so I hope that if they do ask that bridging work permit application and my english test done during that time will be enough. I also have the flight ticket I booked with all the dates when I was flying back home.
