Shan30, ism45, the email address I used was OttPilot-Immigration@cic.gc.ca, but only because Ottawa is the office that we initially sent our application to.
I poked around on the CIC website to find how to email them, and the page I found was
http://www.cic.gc.ca/english/resources/publications/ref-sponsor/section-contact.asp#. It says there that the email should be "Matching-Centre@cic.gc.ca"... I'm not sure what the exact abbreviation would be for your processing centres, but to find mine, I did a quick google search.
The only issue with yours, ism45, is that they most likely will not respond unless you wait the 30 days. It's what they've told most of us so far... that they can't access the information or check on it until it's been 30 days or more, as that's considered over the maximum processing limit for the first step. I know it's nerve-grating, but it may be better to wait, because if you send them an email now, and then another after the 30 days (if they don't respond because the first one was too early), they will probably not be too happy that they are being sent duplicates.
Also, just to let everyone know, when I sent them an email I immediately received an automated reply. It notified me that they had received the email (which is nice, as it reassures you that you have the correct one), and it also listed the information they need to be able to check on your application. Make sure to include everything that you can from this (obviously I didn't have all this info as I wasn't even at stage 1 AOR when I contacted them, but it was fine):

6. Type of application (Family Sponsorship, Canadian Experience Class, Provincial Nominee, Quebec Skilled Worker)
Please include your application number and the purpose of your email in the title.
If you are a person to who we are authorized to release information (written consent on the file), the above information must pertain to the applicant. You must also provide your full name, telephone number and address. If you are not the applicant or you are not authorized to receive information, you will not receive a further reply to your email.
If the above information was not included in your email, please email us again with the requested information. We will not respond to your request until we receive all of this information in one email.
Sending multiple emails concerning the same request will not accelerate the response delay.
