I know that the sponsor can apply for a open work permit for the applicant when applying for the sponsorship category.
My question is: how long will it take for the applicant to get the open work permit and start to work?
Meanwhile, what about the period between applying and getting approved or getting the work permit? What if the applicant's legal status expires?

If you are applying Inland, the estimated wait time for an OWP is 11 months.

I can't speak to your second question and will defer to those here that know...which are a plenty!

*Edit* It is the APPLICANT that applies for the OWP, NOT the sponsor.
 
Thanks for your response. I remember reading somewhere on CIC that, foreign spouse can still stay in Canada after applying for PR even if legal status expires. But I guess, he/she can just stay here, can't work or study.
 
If an OWP is applied for with the inland application, the applicant gets implied status as a visitor. Hence will not be out of status.
