I got my PR 2 months ago.
If I find a job and lose it, or if we then decide to have a baby, will I be entitled to Employment Insurance/maternity leave? Or will I have to rely solely on my husband's money as he is my sponsor?

You will be entitled to EI / maternity leave provided you have worked long enough to qualify for these benefits.

I was worried that if my husband had to promise to support me, I might not be eligible for receiving any benefits.

He/you can't go on welfare without being required to pay it back.

EI (for either of you) is not welfare. Any eventual child benefits are not welfare either.

Hello,

How to calculate the Employment and maternity leave is to based on the hours and revenue of past 12 months.
There are minimum requirements to have these benefits,
and the amount depends on the revenue you have made the past employments.

You have an option of parental leave, meaning either a wife or a husband may have it,
There are some cases the person who has more income for the past 12 months will take it.
Find out more about parental leave and apply in your plan if having a child.
Before having a child, you should make more revenue, so the benefits will be better.
