You may leave the UCI blank if you cannot find it. also if she goes prepared with the application and all the documents and the receipt and the return ticket and everything that we've submitted, would there be any reason for them to deny her entry?!

Yes, she can be denied entry. You see, entering into Canada as a visitor has nothing to do with her PR applicaiton and her PR application does not support her entering as a visitor; the statuses are different. Plus, having a PR application does not mean you will get it, so immigration agents can always use their discretion and deny entry for the reason of a "visitor intending to stay". Remember that entering in Canada as a visitor carries the promise that you are intending to leave, which would be in contradiction with a PR application.
