I believe that chances of rejection at the level of Visa office is minimal based on sponsorship eligibility..They can reject if they suspect that relation is not genuine or the principle applicant ( if called for interview) can not show required documents( asked by VO) to prove the relation with her/his sponsor..
Practically speaking the visa officer located at the office in particular country is not goin to check back the eligibility of the sponsor..they are pretty busy with checking genuineness of the relation between sponsor and principle applicant rather than checking if the sponsor is still working or eligible for the sponsorship.
Legally speaking -- A sponsor needs to be working or not be on any social assistance if not working throughout the period of sponsorship.
