This is about her tourist VISA not her PR application.

Would they send the VISA extension by email because she alrady has a tourist VISA ID number instead of mailing the new one?

By the way, on her appliaction they had both her and my phone numbers and have never contacted us. I did get a missed call yesterday that was titled "Unidentied Caller" though.

Dunno. In my wife's case the extension just showed up in the regular mail one day. No emails or phone calls. It will be a rather official looking document entitled "Visitor's Record".
 
Was that her first Visitor Record or an extension of an extension?

God, it just feels like CIC will never be finished with us.
 
It was her first extension of the 6 month visitor's visa she got at the airport when she arrived.

I received email from Manila to request for further information so I mailed the package through registered mail ( Canada post)
Somehow website on Canada post showed that the package arrived in Philippine , no further information after.

so I checked out philippine post office, according to their website the package is left out for delivery but no delivery confirmation or anything.
can i assume my package was delivered ? kind of worried

Why not try calling Canada Post and see if they can confirm delivery for you.

My landlord finally came back to us with a new lease. She ended up just creating a new back dated lease for the entire two years with my fiance's and I's names on it. This is fine right?

I'm assuming that we have to mention in the app that it is a backdated lease? I'm not sure if its relevant or not.

Also.. the list of stuff that needs to be translated and notarized..

- old style police cert
- lease

Is that it? We were going to get bank records translated by a friend but not notarized.

My wife and I married in Korea last year, and we still haven't bothered to change her last name yet. Seemed like a lot of hassle to us as she'd have to get a new Korean passport, PR card, health card, etc. We may actually never do it as it's not a big deal to either of us. If we do we may wait until she gets citizenship and can start using my last name with her Canadian passport.

Don't really see any pros to it, except if a couple thinks a wife having husbands name is important. In Korea the woman typically keeps her own last name anyways.

We have contacted EMS and UPS, and they are not willing to ship the documents because the address in Mississauga is a PO Box. Has anybody else run into this problem? Any advice on how to get around it?

First important update for us that might let others at the beginning of the process know what to expect:
My wife and I sent our paperwork through EPS on July 10th from Seoul and got the text confirming delivery on July 13th.
Since then, I hadn't heard anything at all from the Missassauga office, so I was getting a bit nervous, but we got our official email for sponsorship approval today. (46 days after they received it)
We didn't get any affirmation of receipt(AOR) email or anything prior to getting the confirmation. The official letter was sent as an attachment to an email, and the email clearly stated that if I received the letter by email, I would NOT recieve a paper copy in the mail.

The letter itself confirmed approval and confirmed that our package had now been transfered to Manilla.
Step one complete!

Planning to visit Niagara Falls and "land" late at night. I assume its okay to land 24/7 and we can do it late at night, 1-2 in the morning? Or is it a bad idea because there may be less officers working and it will take more time?

You should be okay but you might want to consider doing it a little earlier, say 8-10. Between one and two in the morning I would guess they get a lot of drunks coming back to Canada from a night on the town in the states drinking that cheap U.S. beer.
