For a visitor travelling on a multi-entry, multi-year Visa
when they enter for a visit of about 6 months
do they need to show the return air plane ticket when they enter?

If their return date is uncertain, maybe they will return within the last 15 or 16 days
of the 6 months, but they would like to finalize that travel date after they are
visiting for a couple of months,

How do they do that? How can they show they have the airplane ticket to return and
still be able to adjust their date, within the legal limits, for personal scheduling reasons?
 
Buy a return ticket from the airline that is flexible and allows you to change the date of your return flight. This will cost you more but will give you the flexibility you're looking for.

Without a return ticket, the airline may not let you board the airplane to Canada and immigration may give you a hard time when you try to enter Canada.
