My only missing thing is the letter stating 1 year work after PR. I have valid WP for 2 more years and I am on a full time job. Missing that letter is a concern and not sure if there is any alternate for that.

I think what you can do, if your employer is not giving a letter is...Attach your hiring/offer letter for job, alongwith the latest pay stubs of past 3 months, and a letter from the HR mentioning that you are currently hired in the job position for which an older offer letter is attached. No separate checklist is genereated for IELTS/CELPIP. You can upload it with the education documents. If you have already submitted the application, then forget it - they'll get back to you if they need the document. I have mentioned in my LOE that I had no slot for CELPIP in my checklist so I am including that with this letter below.
Your safest bet would be uploading IELTS result with educational credentials file if still you didn't submitted eAPR yet. If you already submitted eAPR without IELTS & haven't been contacted yet by your VO, you can raise CSE/email to Ottawa.
