MIDI will consider the profession you initially applied in your application. I dont think it is in anyway possible that they gonna shift from one aot to another if the latter is not the profession you are practicing at the moment.
I think MIDI will consider the profession you initially applied, however about work experience Quebec does not say it has to be 100% related to your AOT they say the following:
Work experience
Your work experience must have been acquired:
legally in Québec or abroad, in the five years prior to the date of submission of your application for a Québec selection certificate;
in an occupation with a skill level above "D" as defined by the National Occupational Classification (NOC)
Level D occupations usually require a brief demonstration of the work to be performed or on-the-job training. They do not have any particular educational requirements (e.g., a job in a fast-food restaurant).
The work experience can be acquired on a part-time or full-time basis in paid employment.
Internships (paid or unpaid) carried out as part of training recognized by a diploma are accepted as work experience.
Of course it will be up to them to recognize it and give it points or not.
