it doesn't matter where you get married. either will be recognized as legal marriages. yes, if you plan to be in canada long term as a visitor, it's recommended to get travel insurance in case of accidents or illness. visitors are not eligible to receive governmental healthcare in most, if not all, provinces. alberta and bc may be different, though it's been reported getting approved for healthcare as a visitor requires a lot of untangling of red-tape.
In Alberta, if a visitor is married to an Albertan resident, they automatically get Alberta health care, but it expires when their visitor status expires. My husband had to go in and extend his after his original 6 months with his next visitor record for 6 months.

I am married to an Albertan resident, do I need to apply for it? Where do I go?

http://www.health.alberta.ca/AHCIP/how-to-register.html

If your SO already has AHCIP, they need to fill out a form called "Addition: update and/or add a family member". Take all your proper ID in to an authorized registry agent and they'll send your card to you in the mail a week or so later.

Is it worth leaving my accounts open over here as that shows im intending to return and have a reason to?
By all means yes, leave your UK bank accounts open. First, they can come in handy when you submit a request to extend your stay as a visitor, as you need to send them the last 4 months worth of bank statements. Second, it's not easy to open a bank account in Canada while you're on visitor status. Third, you may find that UK banks don't rip you off **as much**.

I would be very careful on going out and re enter canada. Here is a post where i just wrote my experience, maybe it can help you too
http://www.canadavisa.com/canada-immigration-discussion-board/extending-a-visitor-visa-in-order-to-be-able-to-apply-for-common-law-sponsorship-t193653.0.html

Hope is ok to give you this link since I dont think i should repost it here, it not all applies to your question.
In my case asking for extended stays has been the successful way to go however i am applying common law so i had to be here for more than a year.
If when you come back you have to face an immigration officer asking questions like i did it might get complicated, at least in my experience i would never risk that again, it was a bad one and i got really lucky. Hope it helps.

Just wanted to say that, while I know all of our experiences differ, we had absolutely zero trouble opening a joint bank account for me and my husband with Bank of Montréal while I was here (Québec) as a visitor. The husband had an existing account with them for perhaps a decade. When we got here (before we even submitted a PR app), we went into a branch office, and using my U.S. drivers license (not even my passport), added me to the joint account he opened that day. Easy breezy.
