My wife is holding a visitor visa and living with me in Canada right now. I am sponsoring her application but having confusions about choosing inland or outland. I want her application to be processed in Beijing. But she is physically living in Canada now. On CIC website, which package should I pick? the live in Canada one or outside Canada one? If I chose the live in Canada package and indicate Beijing as the requested processing office, would that be okay? Or I have to choose outside Canada package to apply outland??

Thank you guys, please help me here.

you want to choose outland. your wife is not "living" with you. She is "visiting" you. if you choose inland, and she leaves when her current visa is up, your application is in jeopardy of being cancelled. For outland, it does not matter if the applicant is in canada at the time of the application being sent.

To choose Beijing as the VO processing her application, you have to choose outland (outside of Canada). It is absolutely fine if she is here in Canada with you while you file outland. She will need to keep her status current to stay here (an extension to a visitor visa can be requested from CIC online and should be submitted at least 30 days before expiration of her current visitor visa). If an interview were required, an outland application would mean she would have to travel to Beijing for the interview (interviews are generally requested when there is some doubt about the genuineness of the relationship). Good luck!
