Look like you are ineligible and you stole a spot from a person who are totally eligible and hoped to get his/her parents in Canada. You crashed their dream but you don’t care, don’t you?
At least you will lose your fees when you file you application and it will be refused
This is totally uncalled for!!
Between Interest to Sponsor and application, my spouse passed away (would have been co-sponser) which I was not expecting. With out knowing the personal situation dont conclude. If anyone, I need the support of my parents in Canada as I am a mother with a toddler in a foreign country and no extended family!!

Yes EI should not be deducted. You pay for EI premiums as do everyone who is working and employed.

Should be good. You can submit your application and write a letter arguing that because EI premiums are paid with our money IRCC should NOT deduct EI income from line 150. Explain that if they dont accept this you will write to your MP and complain.

IRCC will be very scared and will relent.

It will work. So submit your application.

Don't worry man.. just give the SIN number and let them decide.. Their tweet says it is counted, as well as the agent.. So don't assume that you lost..
So, do they count the Total EI paid alone or taxes deducted as well?
If only Total EI paid, then I am still eligible.

Yes you can. Just write a letter to explain. You can always apply for the other parent in another year. You had to declare that you met income requirements and after review by IRCC you still got the invitation to apply. So you are good. Just send in the application with the explanation letter.

Every case is different depending on your circumstance. IRCC will review each case individually. That's what the application fee is for.

On the website it says
“Count the number of parents and grandparents you want to sponsor ANDtheir dependents (spouse or common-law partner and dependent children).

You must also include the dependents who will not come to Canada with your parents or grandparents.

Add the total number of persons covered in steps 1 and 2. This total number represents the size of your family unit. Look at the Minimum Necessary Income Table for Parents and Grandparents Sponsorship in this guide to help you decide if you have the financial ability to meet sponsorship requirements. Note that your calculations will only be an estimate”.
So He/she still need to include father to calculate minimum income

But people say that form tells a different story.. So don't assume.. just submit the SIN.. Let them calculate from the data from CRA. Income reported to CRA is before taxes.. So I think they should take before tax amount.

For IMM5768, Q14 I filled like the following

2019-01-01 Present Company: ABC Gross Income : "Say $10000 (Jan to April)" Family Size 4
2018-01-01 2018-12-31 Company: ABC Gross Income : $55000 (NOA line 150) Family Size 4
2017-01-01 2017-12-31 Company: ABC Gross Income : $55000 (NOA line 150) Family Size 4
2016-06-05 2016-12-31 Company: ABC Gross Income : $35000 (NOA line 101) Family Size 4
2016-01-01 2016-06-04 Self Employed Gross Income : $1000 (NOA line 135) Family Size 4

In 2016 June 5th I started with Company ABC , still working and before I was Self employed (sole proprietor). So I separately entered one for ABC and other for Self employment. For 2016 gross income for ABC I just used the Employment income (Line 101) and for Self employment used the Business income (Line 135)
I am sponsoring my father and mother, my wife is co-signing. So for family size I entered 4 (Me+Wife+Father+Mother)

Please advise, the above are correct or not.
Much appreciated.

You don’t need it for now. They will require it later.
You (parents) need PCC from each country where parents lived for more than 6 months

I will be short on money required to sponsor both of my parents but I do qualify for 1 parent financially based on last 3 years line 150 on NOA. Can I apply for my mom ONLY this time as single applicant?
No, you will be disqualified.
You can't pick and chose to include one or both parents.
Unless they are separated, You must qualify for both parents first, then it's up to the parents to come or not.
No letter or tears is going to convince IRCC to look the other way, this is clearly stated in the guide.

Reason is, if you only qualify for 1 parent and you are allowed to apply, once 1 parent gets PR, he/she can simply invite the other parent as Spouse.
Anyone who does not have enough income for both parents would be using this loop hole if this is allowed.
