Yes. In fact last year someone got his visa in May for Sep term. They don't need to delay visa just for the date, they will simply question you at immigration so be ready for that.

Does the embassy always ask for deferral letter? My university has not issued me the deferral letter yet. In case the embassy asks me for it and I am unable to provide it then what?

Then your visa application will be refused. Start working on new letter even Sep 2015 one will do.

And what if I let them conclude the application on the current LOA which they already have?? Just trying to have a deep understanding of the possibilities.

If the joining date on the letter has passed then they will ask for new letter for sure as study permit is issued on POE with dates mention on the letter so that date can't be in the past.

Tell university about your visa situation and ask for the advice and solution. Don't be afraid to contact the Graduate Coordinator and inform him/her about your visa and possible solutions. Start working on it now. In fact call university and your adviser as well and explain everything and do it today. Not to sound bitter but monster is pretty ruthless :-X.

You need letter for study permit which is issued in Canada so look from their side. They need some sort of proof else how they know?

You don't need sop at all for visa unless you have mismatching courses or visa refusal. In case of visa refusal you need to address the reason on which your visa was refused and how you rectified it.
