In rare cases, they do take your passport on the spot! As happened with Jaytanz.
Don't offer them to take your passport lol. They will ask for it if they want to give you PR right away. But majority of the time they do it thru PPR request.
 
They did keep one members passport on the spot but she had to wait to get it back because her medical wasn't updated.
My husband's case-she was ready to give the visa on the spot untill she realizd that my husband had to do RCMP fingerprints.so she didn't keep the passport and my husband and I went again on later date to do fingerprints.
Yes they are writing evry single thing u say there so be careful and they open everything online. If there is anything u missd on the file be careful while answering them as they can catch u.
Don't take things for granted there as they dnt leave a chance to find out flaws .
Just be honest and confident.

if sponsor is not present, what kind of common questions can they ask?
typically what's the avg time it takes for the interview to be over?
do they give back all the proofs?
do they usually take the passport there? (along with medical and pcc)

Don't take anything for granted, go with full preparation and yes they do return all ur proofs and if u hav ur PCC and medical done u can submit ur Passport same time

if you wants to find the Red Flags, start reading Notes from the bottom. you will find comments on 37 page or up , which tells you about the Red Flags.

Lately they blank out that section where officer leaves his comment in the notes this is what happened to me

Yes I did it before interview by my own(without request) and they accepted
