How much time does it take for medicals to be updated once it is done?. I got MIL on May 6th and got medical done on May 25 still GCkey shows no update. Should I inform IRCC that medical has been done before deadline of June 6

For me it was 10 days

If Medical is marked completed on GCKey, I'd not care about the status on PR tracker. We rely on PR tracker for things other than medical or biometrics - it isn't the most accurate for those two.

For me i took one day, but i think mine was abnormally fast

I have an international trip scheduled for July 2024. Can you please let me know from what point on in the process we can't return without the PR card? Is it from the final decision? From the P1/P2? Or from the eCOPR?

Both P1 and P2, you are required to confirm that you are in Canada. So you should travel after you get COPR and return with PR Travel document.
