I just book flights online via Expedia, Philippine Airlines, or if I'm feeling especially cheap, with Cebu Pacific online to HKG, then another flight from HKG to Canada. You can also fly to HKG through Cebu and skip Manila. I found one way on Expedia for $630, beginning of June - Air Canada and Cathay Pacific.
The catch is - you have to scan and email to your Wife the credit card you used to buy the ticket with . They always want to see the credit card or photocopy.
