Yes, the sponsor provides an Option C printout from the most recent tax year, for example, if you sent your application today you would send the Option C for tax year 2014.
The application will ask you what your net income was for the last 12 months from the date of your application submission.
Spousal sponsorship does not require any certain amount of income but if you have no income you should give an explanation of how you will support yourself and your spouse in order to prove that you will not be using government assistance.

I guess it's not a big deal if you got enough money saved tho. i got approved as a sponsor without any work for more than a year but a had a good money saved so i just gave them my bank statement
