Based on my own experience, I received an email confirmation from them a week after they received the documents per courier's tracking number.

Yes its normal! It will get updated in 7 to 10 days time

It could be. Knowing that there's a high demand for their evaluation nowadays. When I got mine back in February 2014, they initially mentioned that I will be receiving the results within 2 weeks. However, probably due to lean season of evaluation during that time, I got mine within 5 days.
