How do I know that our application Start processing ??

do I recieve a letter ??

You'll usually get an acknowledgement of receipt (AOR) when your application is received at the local processing centre. This happens two to three weeks after the sponsorship is approved.

Depends on what visa office will be processing your application.

Some offices send a letter confirming they have received your app (the AOR letter). Others don't. Those who do send it, can send it right away when they get your app or months later when they actually look at it.

You can check on e-cas to see when they've updated it to show they're processing it, but a lot of visa offices are rather slack about that so it might take a while for it to show up.

I think we can also send a fax to visa office to ask them if we did not recieve any thing after awhile ?? or I do not have to ?

actually they send AOR when they assign file number to your case and start processing. in our case our status was changed to in-process first an we received AOR a week later dated the time they started processing.
