I basically have the similar timeline on ecas and they specifically asked for Hong Kong no criminal record. I was in Canada for 14 yrs and I didn't need to provide rcmp record.

My wife lives close to a city that has some professional photographer studios, and we went to a place that has English stamps.

Is it safe to get plane ticket now for travelling 1 month after sending the passport in to get the visa?
