If you get approved as a sponsor for your dad, and you get married shortly there after, would you need to go through another approval process because your family status changed from single to married? Would this cause a delay in the timeline

No. As long as your new husband doesnt need to be sponsored as well. Just update CIC of your change once you are approved. Upon approval, you would receive a number specific to your case. Through the CIC website, send them a CSE (Case-specific Enquiry) with your number and information and tell them that your family status has changed because you got married to X on date X. You could send them a copy of your marriage certificate for proof. Just be sure to state that you are not sponsoring your husband, just letting them know of the change.

Yes, and yes. You will need to meet a higher Low Income Cut-Off (LICO) level since your family size has changed with the addition of your spouse. If your spouse is signing on as a co-signor, he will need to complete the proper forms so you can update CIC.
Thanks for the information, so a sponsor getting married or having kids for that matter would affect their current approval and they would need to re-qualify for LICO each time their family status changes?
Just curious after you have been approved as a sponsor what is the average processing time before you know about your parent's application? Would it be faster if he is actually visiting in Canada?
