Your employment letter should satisfy the following:
1- Printed on official company letter head and having the details of that company (phone number, website, email, address...etc)
2- Has the details (name, title, email, phone number/extension...etc) of the person providing the letters (most likely the HR or Personnel Manager) and his/her signature (I got an official company stamp on mine as well and requested details of my direct supervisor and his signature to be added as well).
3- Your name, Job title, Employment status (active or not), Joining date, ending date (if not active), working hours per week, yearly salary and benefits.
4- Main duties and responsibilities.
It will most likely take more than one page so logically both should be signed (and stamped if you want). Mine is also dated and has a company reference number since it was issued officially.
My letter begins with "TO WHOM IT MAY CONCERN" and then says something like "This letter is issued to the concerned staff currently working at blahblahblah request for the Canadian Immigration purpose."
I have used this letter for both OOPNP and CIC, so far it worked for Ontario and CIC did not comment about it and gave me an AOR and requested a few other documents but not this so it seems to be fine.
