You will ofcourse mention that job and also send:
1. letter saying why you cannot submit the experience letter.
2. Letter from your ex-boss or ex-colleague confirming your experience and that the company is now closed, along with their current business card.
It is up to the visa officer to accept your explanation or not. The point I was making was that, even if he rejects your explanation, he will still award you points for your other experience and if you still qualify without that experience your application will be approved for processing.
The complete application is only rejected when the visa officer feels you have sent false experience certificates (fake or inaccurate), not when he feels you should done a better job trying to get experince letter from your former employer
