If you have submitted necessary documentation to prove your work experience that is in between application and assessment dates, then they should technically count it (pursuant to R77). For example, if you apply during the middle of the semester, and on your reference letter, you mention that your work term ends at the end of the current semester, CIC should consider the extra hours from the middle of semester until the end of the semester, and take into account all these 'extra' hours since you have 'submitted the necessary documentation' to prove this work experience.
I'm not sure, though, if that also means you can keep updating your work reference letter every month before assessment, in the hope that they will increase the total number of hours and that you may get extra points due to more work experience (this may work, for example, if you apply on June or July, but your current semester is over end of August. If you provide documentation that states you will be working until the end of the semester, then they may award you those hours until the end of August, even though your application date is June or July).
