Nope, you do not have to inform them. at least I didn't. Do keep all proofs from your trip and takes lots of pictures. If the Visa Office asks for any additional relationship proof you can definitely use it. Have a great trip! :)

No interview is not mandatory. It is really up to the officer to decide if an interview is needed or not. Usually if they are convinced relationship is genuine they don't ask for an interview.
