Are you in Canada? if so you can contact your MP in your region to request about your file. Thats what I did. I contacted my MP to request my file in Manila office (mine was taking bit longer too) My MP emailed me the whole processing file from Manila office in a week.

if you are student, I would put student , name of the school and date. if you are not student, you can put N/A.

you don't have to tell that you wanna renew your visitor visa to get married in Canada. you can simply tell that you wanna stay/ travel in Canada etc. (general reasons for extending visitor visa) you would not have any problem to extend your visitor visa.

if he is sending the letter from his current work, then recommend to send both original and translated copies ( no need to notarized). if it is from his old/previous works, don't think he need to send any letter to CIC. hope it helps.

your family can come as a visitor or if they have a proper permit (study/work) then they can come with you. it is not FREE for education and health, they would need to pay for school/insurance etc. Everything costs money.
