Question is the title, I was looking at the Document Checklist and I read that if I am living outside of Canada my sponsor will mail it in. Does it matter where it is mailed from and whom? I am the one working on the applications because it comes easier to me. Thank you for your time, just trying to figure out my options right now, I do apologize for the flood of questions.

If both sponsor and applicant lives outside Canada, it will be fine.

it does not matter, u can mail it from wherever u want

Keep in mind, if u mail it from abroad, you can possibly face a burden of proof of intent to return to Canada or if you returned they might ask you proof of resettlement in Canada, depending on how long you've been away for.
They scan the front envelope with the return address of your envelope into their system along with postage stamps etc.
