You need to provide 3 consecutive years of NOAs (notice of assessments) for you and your spouse (if your spouse is co-signing). The NOAs must be Canadian / CRA.
 
Keep in mind, you should keep your income above the minimum requirement until your parents land as PRs. This is from the canada.ca website...

Do I (the sponsor) have to continue to meet the income requirements during the processing of the application?

If new information indicates that you may no longer meet the income requirements, your income may be reassessed at any time during processing. Your income could also be reassessed if more than 12 months have passed between the dates since we received your application and when processing of the application begins..

You and your co-signer, if applicable, must meet the amounts outlined in the Income for Parents and Grandparents Sponsorship from the date on which IRCC receives your sponsorship application until the day your family members become permanent residents of Canada

If i will be applying in the year 2021 and got the invitation then I have to show the NOA for 2018,2019,2020 or it should be for 2019,2020 and 2021

We do not know for sure. Need to wait for the annoucement.
 
As i give birth to baby boy in dec 30 2020 and while counting for the family members i have to include my baby and look for the minimum income requirement for the 5 family member( me , my spouse, my baby and my mom and dad that i will be sponsoring) or it is just 4 family members

Sorry - no. I didn't look at the date closely enough. If your baby was born in 2020, then you would need to have income to cover 5 people for both 2020 and 2021.

Are you talking about PGP for your parents. You need your NOAs from CRA for the last three years and they need to meet LICO for 5 people.
 
As one of the member said that i have to maintain my minimum income requirement untill my parents land in canada.
if i meet the criteria by providing them the NOA for three consecutive years.
