I have shown experience for 3 years to Canadian employer to get a job but not listed in IRCC forms so far. Is is a part time position and i don't have a continouous proof of employment. If I file a PNP and not declare it in Personal history will it be a problem?

Technically, you are not supposed to hide any information. Declare as much as you can and show proof that you tried for what you can't. This is what's expected from an applicant in an ideal case.
If there are unexplained gaps in your application, that will lead to ADR or other issues.
Just declare everything. My husband worked in his family’s home business for almost 1.5 years and he doesn’t really have a letter specifying it but we declared and gave information about it in his personal history. Hiding information or lying to IRCC is worse than just being upfront.
Of course there would be a problem..
The job offers are usually offered as per one's previous experience. It is usually mentioned in requirements offered to foreign labour. Once it is verified it can lead to consequences.
The work I performed was like on-call basis random hours and random days over a 3 year period overseas via online. During that period I was a full time student in Canada. I honestly have no tract of the days I worked.
How were you paid? You worked online so obviously paid in account, don't you think it can be traced by IRCC when you submit bank statements.
You said you worked online, on call basis then you can easily trace it.
