Which category to choose for sponsoring my wife for Canadian PR

How about if I apply for SOWP only. No Permanent Residenece. Can I do that?
To be clear, if you want your spouse to qualify for an OWP (open work permit), you must both move to Canada and then submit an inland spousal sponsorship application together with the OWP application. Right now it's taking around 8 months for OWPs to be processed after the complete application package is received.

You cannot apply for the OWP only. Not an option.

Sorry, not sure what the processing time is right now. I would recommend you read through discussions here to see recent processig times.

Note that there is no OWP with outland applications.

Yes - she can certainly do that.

She needs to be living in Canada if she is applying inland. Short trips outside of Canada are fine (i.e. few weeks). But leaving for several months will put definitely put the application at risk of refusal. So the short answer to your question is no. Also be aware that it's generally taking 8 months to get the OWP approved right now from the time the application is received.

Then why don't you apply outland. It doesn't even look like she is going to use her OWP for work anyway. (plan to leave for a few months after getting OWP)

No, because inland applicants are expected to remain for duration and it could be cancelled/refused.

If you're not sure if she will remain in Canada, apply outland. (You can apply outland even if she is currently in Canada)
