I Applied for my daughter's visitor visa and it's approved and visa stamped on passport, we were suppose to travel in Oct 2023 but our travel would be delayed.

When I submitted the visitor visa application for my daughter, I mentioned in the immigration forms that we would travel by Oct 2023 to canada but our travel is going to be delayed now until dec or Jan 2024, I am aware visitor visa is valid only for 6 months, and visa was granted for 3 years till 2026, would there be any issue at the port of entry for my daughter as landing date will be changed from what was mentioned in the temporary residence immigration forms ?

If you are a PR you have to consider how much time you have been outside Canada and whether you will remain compliant with your RO. To sponsor your child in Canada you should be compliant with your RO as well.
