We literally just came through the border. They asked how long we’d be staying. We said until Christmas.

However, what if I change my mind and Decide not to go back after we apply for sponsorship...

They didn’t stamp or give me a record. I had a record that said valid until March 2018.

In my experience.. yes you can do it.

If no stamp in your passport means u can stay for 6months more than that u need to apply to extend it.

Eventhough in your passport, TRV mentioned valid till 2020, u only allowed to stay max 6months.. but you can visit Canada manytimes till expiry date

Even without a stamp in your passport max time you can stay as a visitor would be 6 months. If you want to stay longer you should extend you stay as a visitor using the process on the CIC site, apply around month 5. Given you plan it seems to apply for PR you should of course make sure you maintain a legal status in the country.
