I will advice you to do traditional or white wedding here, you can snap enough pictures with both parents, family and friends.
Work on the areas that they are having doubt about the marriage.
Appeal will take like 1 to 3 years depends on how lucky you are, forget about the appeal and do the needful.
Unless you guys are ready to stay separate for like 1 to 3 years, re apply is the best option.

In order to reapply you have to completely sure of what the immigration officers concerns were and the "real"reasons for refusal and address them. Because if they are not addressed the application can be refused again. Appeal process varies in time based on where you live and there are 2 possible resolutions in an Appeal process
Alternate Dispute resolution( ADR) which is an informal meeting to resolve cases they deem as simple( sometimes can be done 6- 8 months after a refusal) or Full appeal hearing. the first waiting period is waiting for the disclosure file which takes up to 120 days to arrive. There the concerns will be outlined. At the end of the day the main thing is to be with your loved one.
