If you are claiming points for the work experience, you have to provide a work reference letter for the same with all the requirements as specific by IRCC, which include the number of hours worked, employer contact details etc.
However, if upon removing this work experience, your CRS and MEC is not affected, you can remove this work experience and only keep it in personal history.
If your CRS and MEC is not affected, there is no need for LoE.
Alternatively, if you do require this work experience to meet the CRS and MEC, you can then ask any of your ex colleague, or supervisor to write a reference letter for you, which you and get notarized, and upload with the work reference letter you already have. Make sure that you explain in LOE why your work ref letter issued from the employer does not have the requisite information. You will also need further supporting documents like IT returns, offer letter etc. to substantiate your claim.
