Technical Form Fillable help, please

Hoping to have everything ready to submit for my husband in a few days and just going over last things. Some of the forms that we filled out on the computer don't work as well as others.

My main problem is that the little form fillable box is not big enough to fit the full name of, for example, full job titles or organisations etc. It cuts it off after only maybe 15-20 characters and those that do let you fill in the full title - when it prints you can't see the whole name. We can't even fit the country - Philippines - full name in some of the boxes.

I thought of including an accompanying sheet with further information that has the full titles, etc written out in a table?

It could be my program or software? The application forms would not work on my computer - a relatively updated Macbook, so we did those on someones's PC with internet explorer.
All the other forms seem to download and save fine on my computer, but this problem with the form fillable - I am using Preview on the Macbook and Safari as the brewers.

Just a note - it is even worse on Adobe Reader. In that program, a little + sign shows up in the box, which on computer means you can click to see the full info, but when you print looks terrible.
